A Series of Unfortunate Events. I loved the books, and I really enjoyed the movie. I've read that the movie made enough money from its theatrical run and DVD sales to warrant a sequel, but Paramount put it on hold. I recently heard rumors of rebooting the series, and switching from live action to stop motion animation. I'm really hoping this happens!
I agree with that, but I think they should start from scratch with the movies. The books were spectacular, but the movie, though it had an excellent cast, totally shot the plot of the books through the head. The directors and scriptwriters should be replaced, and the books should be given a proper adaption that follows the plot CORRECTLY.
I think they should also re-do the Eragon movie, though to be honest I'm not sure if that would be a good idea. Giving the dragon a voice just sounds out of place in movies without feeling corny.
A reboot of the original Star Wars Trilogy would also be kind of cool, as long as they have a great cast and amazing, mind-bending visuals.
