I like her. The SMG games are the best games in the 3D Mario franchise as well, so having characters from it doesn't seem weird at all. I've never even considered her to be "overrated" tbh

Yeah, I'm not sure how you determine how highly rated a character is. The idea that she's made a lot of appearances since galaxy seems to have litttle to do with her and more to do with the fact that Nintendo currently have the habit of adding far too many playable characters to everything.

I don't think there is a problem at all, i think the more the merrier. I'd have even more characters in Smash, Kart, ect... if i could.
I'm with you on the Rosalina thing too, i don't get why so many people seem to like her so much. Also the characters in main Mario games are shallow for sure, as they should be IMO, but they certainly have a ton of personality in the RPG games. They do have subtle quirks that can be very entertaining like Luigi's reaction to ghosts in Luigi's Mansion which largely help set the tone of the game.
Her first appearance was playing a huge part in the game she starred in - Super Mario Galaxy. Unlike Peach, who just gets kidnapped for the most part, Rosalina, however, was not only capable of holding her own (but lost the Power Stars to Bowser), she also has an unexpectedly well-devised backstory, which is a pretty new thing for the Mario franchise. Additionally, Rosalina is the queen of the cosmos, and still goes for war against Bowser to protect it - which is quite impressive. And just to note it, she looks much more ground-level for royalty than most other regal members in Mario games so far.
All of that, and her fascinating characterization (i.e. she's the only character with a meaningful bavkstory to begin with), makes Rosalina stand out as more appealing, which is also why I like her a whole lot.
Of course, that doesn't mean everyone has to like her, since she's still a very flat character compared to most other non-Nintendo characters, and her appearances after Galaxy feel rather forced.
I love her. I'm glad Nintendo gives her some representation. It's surprising what a tiny bit of backstory can do for a character's ability to be liked. I hope she sticks around for a while

Well in the isolated sense, there's no problem with having more of something. It doesn't really hurt anything. But in the real world where resources are finite and spending them in 1 place means taking them from a potential other, I don't want Nintendo spending time on making Pink Gold Peach. If they'd removed that character from Mario Kart 8, not a single reviewer would've given it a lower score.
I would rather they had worked on making all the characters in Mario Kart different from each other. Not bothered about Pink Gold Peach existing though. (I use her instead of Metal Mario because more people use Metal Mario online so might as well).

My thoughts are, while I'll admit she's overrated in Mario Kart 8, I actually prefer her to Peach and Daisy. She never gets kidnapped in the game she debuted in (I think, since I haven't finished Galaxy) and she has more character than them imo.
