I'm not sure where did you guys get that you can play the game again after beating the champion, but I can't find info on that.
As far as I know, after beating the game you unlock the new difficulty settings, but I don't think there has been any indication that you can "replay the game without losing your pokemon".
Serebii even mentions that you lose assit/challange mode if you restart the game!
You don't manually restart it, but I think it'll allow you to restart the game if you choose Hard Mode and you'll be able to keep your Pokemon and all that. That's what I've been told anyway.

I don't think it's a formal restart, I think you can just go through the game again like you can in all of the games but with a steeper difficulty to match your higher levels. In fact, Serebii says that you lose the challenge/assist mode if you restart your save file.
But, all serebii says about these modes is that they change the difficulty of the games.
It never says anything about letting you play again.
Actually, all challange mode does is add up to 5 levels to other trainer's pokemon and change the elite four teams, it doesn't put other trainers "on par with you", assist mode lowers the levels a bit and that's it.
It sounds to me like the game stays the same (you have defeated the champion, the only things left to do are the afer-game activities [If you haven't done them yet])
That's what serebii has always said ever since they did their "new game research". Nothing about being able to start the story again. Just de/increased levels for every trainer and the ability to send the mode to others games.
But that's what I just said. You can go back and battle the trainers and gym leaders etc, just like in the other games, but their levels will be higher.

I'm hoping the trading cinematic won't be so long this time around. After all, this will be the first time we trade normally in the fifth generation, so they still have a chance to make the trading process not so tedious.

I'm gonna wait for a friend who's getting Black2 to beat the champion first and then unlock the Challenge Mode for me (you can use your key to unlock someone else's game even if they haven't beat the champion yet), so I can battle my rival's Lv6 starter with my Lv5 on the get-go.
Sorry to burst your hope TeeJay, but the trading design is the same as BW1. The Japanese version is already out, after all.
I'm looking forward to the harder difficulty with Black 2. I however, won't be getting this day 1. I don't have the money. I'm almost finished with saving up for a Wii U, and I'm not interested in setting my funds back anymore for the rest of the year. I compromised several times with the likes of eShop games and NSMB2, enough is enough.
My neighbour has the Japanese version of White 2, and it's completed so I might as well go see all the after game features like the BW Memory link.
Ask him how the secondary mode works, if you actually do start the story over. Well, seeing how its White, I kinda doubt he would want to play "easy" mode, lol.

I think I should have originally gotten White 1 for White Forest and then Black 2 for the difficulty, instead I got Black 1.

When you beat Iris it shows the screen of the difficulty mode as it shows a key unlocking what it seems to be it, and then it proceeds to the credits once she is beaten. Assist mode makes the game easier if you have W2 and can give the key to a B2 player, and if you give the Challenge mode key to a W2 player it's vice versa.
If you get challenge/assist mode and you reset the game, you can't get it back and you'll have to beat the game again just to get it. Once you get challenge/assist mode though, you continue your file, it's only your opponents that are changed to be a "challenge" and you can always turn the mode off. So don't worry, you won't lose your save unless you delete your save file. (e.g. from the title screen).
