I love it when a game is challenging (not that I don't like easy and normal games as well, as they're fun, too). Examples that come to mind are Super Ghouls'n Ghosts, Mr. Nutz, and Plok (all three well-crafted SNES games, imo).

I agree with many of the things you said, but can't disagree more with this statement.
There is absolutely nothing wrong with with creating games that appeal to only a specific audience or a small segment of the overall gaming population. Gaming has enough room for easy and hard games, and it's totally fair if not everyone enjoys a specific game.
I hate games that are too easy and too hard I like the middle ground, but if there good enough ill play hard and easy but i try to play Little King's Story, Kingdom Hearts 358/2 Days, DKC, Pokemon, and Chibi-Robo most because there middle grounded even KH on Proud Mode.

Klapaucius, you can't compare games with passive arts. Games work because of the tension created by risk and reward. If you pay money for a hockey stick but never hit the puck, do you complain you didn't get your money's worth? No, you practice until you can.
Game developers don't value players' time. I don't want to waste my time repeating the same stuff over and over just to beat a level or accomplish an objective. Every game needs to have a super easy mode where it lets you get through without making you repeat the same thing over when you die. Certain things where you learn skills or knowledge is worth the time. But games are not worth repeating things over just to get a little further. Games should give everyone the option to skip an objective or give you the reward anyway for trying. There's nothing worse than trying over and over to get something done in a game only to fail in the end anyway because it's too hard and ended up wasting hours of a player's time.
How is that a waste of time? Just try again, and you'll see that you'll go farther and do it faster, because now you know what to do and you've honed your skills so you're better at the game than you were before. The only time wasted is the time spent complaining about "how hard the game is". Honestly, the game isn't too hard, you're just not good enough at it yet. The sooner you admit that, the happier you'll be. The only reason you keep doing the same section over and over again is because you're doing something wrong, and you'll make progress once you start doing what you're supposed to do the right way. The game isn't saying "you have to do this section a certain amount of times before you can move on," it's just saying "there's a certain way to do this part, now figure it."
As for every game having a super easy mode, why the hell should the developers waste their time deconstructing the challenges they've so painstakingly made, just to accomodate for a handful of lazy oafs who want to beat the game in their sleep? Besides, most games come with ways to make them easier. Utilize them correctly, and you'll go pretty damn far right there, without needing some kind of special mode.

A lot of games are too easy these days and substitute length for challenge. Then if a game comes out that is shorter and more challenging people says its not worth it because its too short.
But really there are games out there for all types of gamers. Read reviews before you play games so you know what you are getting into. If you die in games because of glitches or problems with the game then its not fun but otherwise challenge is relative. Not only do some people enjoy harder games than others but some games are easier for some than others. All games don't have to be a certain way but there should be a variety of games that cover all tastes and skill levels.
Just because you paid for a game doesn't automatically mean you're entitled to beat it. I don't have to beat a game to enjoy it. Games are more about the experience of the game. Some games have replaying it as part of that experience others you only die if you're not trying. There is barely any games these days that you would get stuck on so early that the game isn't worth it. Plus there are so many guides and walkthroughs online that unless its a purely twitch old school game you should be able to figure out how to get through any tough spots.
