Multiple. Sometimes may end up restarting one if it's been too long. I started Twilight Princess way back when the Wii first came out. I got at least around to where Link could control his wolf form, never finished it. Have to decide if I want to restart that one or just continue some day. I do finish some games though.
Multiple. I like to have a lot of games so that I can play something else if I get bored or stuck.

Generally, Multiple games as playing 1 for too long can get boring, even if the game is great. Currently, I'm going through 3. Kingdom Hearts, Okami and Wii Music.
Usually one main game, but I usually have some side games on VC or things like Mario Kart, where I can play a little bit, but don't necessarily have to devote a long time to at once.
I should make a VC a "main game" soon though. I play a lot of games on VC, but I don't beat them. I didn't have a Nintendo as a kid, so I have a huge backlog of games I've bought but haven't played all the way through.
I try to stay away from really long games and I like games that are fun to play in short bursts, and still even have unlockables. I play the longer ones starting when I get the time.
I also don't beat games very often. If it's an action/adventure game, I get to the last boss, save and continue later...but never do... The reason why we would buy them in the first place is that we like to take our time and not finish a game in a couple of days. Also, just because we don't beat it doesn't mean we won't ever play it again

Why don't u rent more often instead of wasting money on full priced games you aren't really keen on completing anyways
Because I like having a collection of games I really liked and if I want, I can always go back and play them again.
I don't buy games to finish them, I buy them if I know I'll like them and they'll look nice on my shelf. I'll rent a game if I'm debating whether or not to buy it, but if it meets the criteria above then I'll just buy it.
For example, I just rented Infamous for my Playstation 3, and I liked it so much I actually played for about 15 hours over the course of two days until I finished it. (The only other game this gen to make me play until I finished was Tales 2 for the Wii)
Now since I know I really enjoyed Infamous and the box and everything looks nice, I'll go buy it and have it sit on my shelf. So for me collecting is a major part of playing video games.
I have many on the go at once; sometimes you get a jones to play something and there you are. I usually only have a couple of story-based games that have an actual ending on the go at once and then I'll play some pick-up-and-play titles here and there so I don't feel like a long game is taking over my life.
I have started games I'm not sure I'll finish. Took me about a year to finish Bomberman '93; I started Pitfall The Mayan Adventure, but I'm not sure I'll continue with it because it's a platform game and I don't get into those easily. I've still got a couple of levels on the hard version of Pole's Big Adventure to get through, but the squid boss has been kicking my ass so I just let it sit for a couple of months. Maybe I'll have another go at that tonight.

I do the same. Of course, it recently backfired. I got to the last dungeon in the original Zelda's second quest (basically a harder sequel within the same cartridge if you haven't played it), and when I came back to it today I realized I never actually "saved" it, just used the Wii's save state feature, and I think I lost that when I switched to SD card. Hopefully it's still on the console...
Of course if you leave a game too long you also risk not remembering what it is you were trying to do; I had this happen in Lost Winds and given there's no clues as to direction normally it took a while to get back into the swing of things!
It happens to me so often that it's not even funny anymore, I got stuck in Land Of the Dead Road To Fiddler's Green, and one year later I came back to finish it and I didn't know what the hell I was doing.
