I never had a problem with it personally. If anything, I thought it tied the prequels and the original trilogy together better and showed Anakin during the time he was serving the light side of the force.

You could make the argument a force ghost takes on a form that shows their ties to the light side of the force. Yoda and Obi-Wan Kenobi never turned to the dark side, and died in old age on the light side. So, their force ghosts have them at the age that they died.
For Anakin, it gets a bit dicer since he turned to the dark side as a young man, lost most of his connection with the force when his body was destroyed, and when he did turn back to the light side of the force, his body was a twisted mockery of what it had been.
So, the argument could go that the force chose to have his force ghost take on a form from when he still served the light side of the force and his connection was still the strongest. Which would be when he was a young man. In a way, since Anakin Skywalker "died" when he became Vader, this was the force's way of showing him when the dark side did not consume him, before he became Vader.
^ If your "reason" for inserting Hayden Christiansen into Return of the Jedi involves a convoluted justification not present within the context of the film itself, yes, it's senseless.
Not sure if you missed it, but Darth Vader redeemed himself at the end of Return of the Jedi and died a good man, lovingly with thoughts of his two children. That's the entire point of showing his force ghost to begin with. He found peace in the end. Young Anakin only sort of begins to make sense if we believe that Darth Vader died evil, but even then, we have to assume that force ghosts are magical genies that can travel back in time.

You'd think not, but then why wouldn't they do it before the buyout? The most thought they've ever given it was releasing the unaltered trilogy on DVD bundled with the edited ones, a terrible transfer job that was widely criticized for its poor technical quality.

I already have the original versions on both VHS and DVD (and they are the only versions i watch, unless it's on TV or something), but cool that they're doing this.

Fox did release the original unaltered alongside the special edition DVDs around 2006, I believe. The transfer job on the unaltered versions is pretty bad though. Lots of technical problems. They look worse than they do on VHS.
If you want to watch the unaltered versions now, the best way is probably Harmy's Despecialized Editions. It's a fan edit that restores original footage and such in full HD. I don't think I'm allowed to link them here, but I'm sure you can find them on Google.

A thousand times false.
The DVD releases (part of a special edition package) are the original theatrical cuts (e.g., the original film doesn't even have the "Episode IV" attached to the intro crawler), and the VHS copies are the versions that were available before the Special Edition releases).

Does Disney own 100% of everything that is Star Wars now?
Everything except the distribution rights of the first 6 movies, all of which except A New Hope revert to Disney in 2020.
You are ignoring the fact that George Lucas was involved at that time and had a say (final?) in everything that was released. He didn't want to put out the original cuts because he stated many times that the special editions were what he intended the films to be.
Now that he has sold his interest in the films and is essentially out of the picture, Disney/Fox can pretty much do what they want.
I never bought any of the Star Wars films on bluray, but once the originals are released I'm buying it day one.
