As for suggestions... hmm. A lot of the games in Wii Sports Resort are played Wiimote-only. Apart from that, just what the above folks said.

Yeah, World of Goo, House of the Dead, Boom Blox and Endless Ocean are all good. I would say Zack & Wiki, but you mentioned it wasn't his kind of game. At points you actually do need two hands though.
How about Tiger woods PGA Tour 10? It's totally possible to play with one hand on that.
Swords and Soldiers is a must.
If he likes to laugh, the Strong Bad games would work nicely.
Art Style Orbient is great, and you only need two buttons to play.
Art Style Cubello is good, if you're looking for an arcade style game.

All of Telltale's games are pretty good (even though they're more pointy clicky than action...y). Really, the only other things I can think of are WiiWare. Unless someone can operate the Nunchuk for him. :3

Endless Ocean 2: Blue World. Uses only the Wii Remote and is very relaxing.

Would the original Wii Sports go well as a recommendation? You can play the majority of the sports with one hand, except for boxing.
