Chrono Trigger and Final Fantasy IV. I'm currently playing the latter one.

Chrono Trigger, Disgaea and TWEWY were my favorites.

Disgaea is pretty cool, the gameplay is a little bit slow, but there is an exceptional amount of stuff that to do. Levels go up to 9999, and there are dozens of maps, classes, and other stuff to play around with.
I own it, but have yet to put serious time into it, but I can say that the semi-slow pace makes it not so good for short game sessions.
Final Fantasy III is my favorite RPG on the DS. Everyone should try that out. Or, if you want something with more story, go for FFIV instead. Personally, I enjoyed FFIII more. And yes, Chrono Trigger is a "must have" if you've never played it before.
Also, I've just recently started Nostalgia. I'm about 3 hours in, and I'm enjoying it so far.
And now for some RPGs I suggest you skip: Children of Mana (but Sword of Mana on GBA is awesome), Magical Starsign, and Etrian Odyssey.
A few people have mentioned the game Nostalgia, and I will second that. If you enjoy classic, no frills RPGing circa 1995-2000, you will enjoy this game.
And, if you're really hardcore, The Dark Spire is obscenely difficult and retro.
I guess I'm not as hardcore as I would like. Dark Spire really didn't grab me and I put it down in favor of playing other games. I'm going to try to get back to it eventually. Of course at $5, it's worth a shot for anyone who likes RPGs IMO, and I don't regret buying it at that price.

Fighting Fantasy:The Warlock of Firetop Mountain.this game is based off a series of gamebooks called Fighting Fantasy.this game is not very well known and the reviews are bad but its my favorite RPG of all time.its a First-Person RPG thats like the first couple of Elder Scrolls games.
Solatorobo: Red the Hunter is an absolutely fantastic experience. It may be a little easy and simple, but the wonderful music and characters will draw you in.
Radiant Historia is a fantastic game that I don't think a lot of people got the chance to play. Although some would write me off, I'd compare it to a more modern day Chrono Trigger.

Contact, Shiren the Wanderer: Mystery Dungeon, Digimon World DS, Lunar Knights, and Mario & Luigi: Partners in Time. Chrono Trigger DS is also good, but the DS additions all suck, and bring down an otherwise great game.
