I am getting coins very slowly. Playing easy tracks like toad circuit 50cc over and over again is getting boring. On harder courses you are always pounded with items and keep losing coins. I just joined the Coin Farmers community. This makes it easier, but what is the best way to get coins?

The best way is to learn where they are and keep picking them up as you race. If you work on unlocking Mirror Mode and three-starring all the tracks, you'll pick up coins easily — and remember that you can pick up coins by playing online as well.
