Because they might have been sequels storyline-wise, but the gameplay in those games were vastly different from the Wind Waker. The Wind Waker was an epic 3D adventure that used sailing to explore a gigantic world. The DS Zelda games were top down Zeldas that were touch screen only games.
I want to see a REAL sequel to the Wind Waker that advances the exploration elements that were in the original.

They could still make another sequel to Wind Waker. Anyone remembers the 100 years gap between PH and ST?
Though I hope they reintroduce the Game Boy era art style and gameplay instead (mish cap used GB-like gameplay with WW's graphics, and it's been like that ever since for portable zeldas (until OoT)).
Well, probably not, but I would like to see another game like the Oracle GBC games. 2 versions, or rather 2 different games that can connect to each other. Best handheld Zelda games imo.

Plus, the draw of the Oracle games was connectivity like the Pokemon games. It's not necessary, but it adds to the game. And i think linking with each other, you can play Seasons adventure in Ages and vice versa. There was supposed to be a 3rd game based on Farore but that got canned

Linking won't allow you to "play seasons in ages" or the other way. It just makes the version you already completed the "prequel" of the game you're linking with. This means characters from the previous game will appear and remember you and new things will happen that wouldn't happen in a normal file.
If would be cool if nintendo would do the 3rd game for the 3DS (i think it was something about "The Seed of Courage" or something like that) and allow 1 way connectivity with the originals using the original's passwords. But that's asking a bit too much.
